This exceptionally fruity lot comes from Marcos Vinicius in Santo Antonio da Lagoa Seca, in the Minas Gerais region of Brazil. The region is synonymous with exceptional quality coffee grown by small, innovative producers with an eye for detail and Marcos shows exactly why. Keeping his coffee cherry for this lot stored in a covered, stacked "volcano" shape encouraged a low oxygen environment for fermentation to occur over three days before then stirring the coffee every hour until the evening when it was stacked into the same shape to rest. The process was repeated for a total of 20 days before it was pulped and shipped.
We're thrilled to share this exciting example of what bold, fruity profiles Brazilian coffees can offer and especially to have sourced it through the wonderful team at Bossa Coffee, run by Bruna and Emma. Originally importing coffee to the UK directly from Bruna's family farm and their neighbours, Bossa is now working with fantastic producers across Brazil that emphasise sustainable farming practice and genuine connection between customers and origin with their genuine, relational approach.
