SIPRO, or Sierra Productora de Cafe, is the results of combined knowledge and dedication of 9 producers around Amatenango de la Frontera in Mexico's most southern state of Chiapas. Bordering Guatemala's renowned coffee region of Huehuetenango and sharing much of its growing conditions and climate, it's little surprise to taste the quality and depth of flavour in this incredible coffee.
Sourced through our friends at Raw Material in their work with local Mexican exporting company Red Beetle, it's encouraging to see more paths for producers in the region that avoid coyotes (exploitative local coffee intermediaries) who offer little stability or professional support, knowing that there's often little other choice for producers in more remote areas. SIPRO also represent around 20 other farmers who are family of the core associates, pooling their resources together to have greater strength in the market yet remaining small enough to be dynamic and see the best results for the unique needs of each individual producer.
