Sourced through the great team at Raw Material, their Villamaría lots come from the Jamaica processing station, close to the city of Manizales. The station processes coffee from between 30-50 coffee producing families from the nearby higher altitude area of Villarazo and puts a focus on working with these same producers year after year to build consistent, high quality lots that will be bought at reliable prices.
This particular varietal of coffee, “Pink Bourbon”, was thought initially to be a hybrid between the Red and Yellow Bourbon which are ubiquitous across South America, but further studies have shown its genetic origin is much more linked to Ethiopian Heirloom varietals.
Colombia itself is an exceptional coffee producing region that can create flavour profiles across the entire spectrum from deeply sweet and rounded lots to bright and floral coffees that could easily be mistaken as a classic African cup with intense fruit flavours.
